Avocado Key Lime Ice cream (Dairy-Free)

Todays recipe is a VEGAN Avocado Key Lime Ice cream! I wanted to create something that was refreshing, yet light since it is spring time and summer is right around the corner. I absolutely love this recipe and will make it again for sure. Unlike regular ice cream, this is low on calories, light, tangy and just so good and good for you! An avocado is a unique type of fruit that is actually technically considered an oil. I’m sure you’ve heard before that an avocado is a fat but a “good fat,” so what does that really mean? Well, lets start with the fats that you want to eat in moderation or avoid consuming large amounts of which are the “bad fats.” These are the trans and saturated fats. Most of the fat in the avocado are health-promoting monounsaturated fats and polyunsaturated fats, especially oleic acid. Think of oil; just like how oil dissolves oil, fat also dissolves fat. So the “good fat” helps to dissolve the “bad fat.” It has also been shown to help lower LDL cholesterol (the “bad” cholesterol) and increase HDL cholesterol (the “good” cholesterol). You want to eat foods that help to especially increase HDL levels because this is the cholesterol that will take the bad cholesterol out of your tissues and deliver them to the liver. Avocados are also very nutritious and contain a wide variety of nutrients, including 20 different vitamins and minerals. Some of these nutrients are:

  • Fiber
  • Magnesium
  • Manganese
  • Copper
  • Iron
  • Zinc
  • Thiamine (vitamin B1)
  • Riboflavin (vitamin B2)
  • Niacin (vitamin B3)
  • Phosphorus
  • Vitamin A
  • Vitamin K
  • Folate
  • Vitamin C
  • Potassium (even more than bananas)
  • Vitamin B5
  • Vitamin B6
  • Vitamin E

Ingredients:

1 ripened avocado

5.4 oz can of coconut cream

(you can use full fat coconut milk
and also use the water from the can)

1/3 cup melted coconut oil

1/2 cup organic blue agave nectar

(you can also use maple syrup or
sweetener of your choice)

1/2 tsp of mocha root powder

(this is optional but has many health benefits)

1/4 tsp pink Himalayan salt

(Healthier alternative to processed salt and may even help lower bad cholesterol)

1 tsp vanilla extract

(you can also use vanilla bean or
powder. I know some people do not like
to use extract because of the alcohol)

juice from 2 limes

(I use about medium size limes)

a pinch of lime zest

(this brings out that delicious and
refreshing lime flavor)

1/8 tsp spirulina powder

(this is also optional but is great
for added nutrition and will also
brighten up that green color)
